INGREDIENTES:
2 Lechugas romanas
1 Lechuga americana
1 Paq. de tocineta de 250g.
2 Tazas de pancitos en cuadritos tostados
1 Taza de queso parmesano rallado
ADEREZO
1 Taza de aceite de oliva
2 Yemas de huevo
2 Cdas. de vinagre de vino blanco
1 Cda. de salsa inglesa
1 Cda. de mostaza
1 Cdta. de sal
Pimienta negra recién molida
PREPARACIÓN:
Procedemos a lavar las lechugas, hoja por hoja. Secamos muy bien y las picamos con la mano o con un cuchillo de plástico para evitar que se pongan negras. Colocamos en una ensaladera.
Para hacer los cuadritos de pan, podemos utilizar pan de molde o pan largo que tengamos en casa, los rociamos levemente con aceite de oliva, polvo de ajo, sal y pimienta, para luego tostarlos en un sartén o si prefieren los llevamos al horno y se mantienen aparte.
Freímos las tocinetas picadas en una sartén, hasta que que estén bien tostaditas. Escurrirles la grasa con papel absorbente.
En una licuadora, colocamos la mostaza, las dos yemas de huevo, el vinagre de vino blanco, la salsa inglesa, la pimienta y la sal, agregamos el aceite, poco a poco, para que espese.
Al momento de servir, mezclamos la lechuga con el aderezo, el queso parmesano, los pancitos tostados y las tocinetas tostadas.

Notas: Una vez aderezada la ensalada debe consumirse enseguida para evitar que se duerma la lechuga. El vinagre de vino blanco puede sustituirse por jugo de limón (3 limones aproximadamente).
Cesar salad with bacon
INGREDIENTS:
2 Roman lettuces
1 American lettuce
1 Paq. Of 250g bacon.
2 cups of bread rolls on toasted pieces
1 cup grated parmesan cheese
DRESSING
1 cup olive oil
2 egg yolks
2 Cds. Of white wine vinegar
1 Cda. Of english sauce
1 Cda. Mustard
1 Cdta. of salt
Freshly ground black pepper
PREPARATION:
We proceed to wash the lettuces, leaf by leaf. We dry very well and chop them with your hand or with a plastic knife to prevent them from turning black. We put in a salad bowl.
To make the pieces of bread, we can use bread or long bread that we have at home, we sprinkle them lightly with olive oil, garlic powder, salt and pepper, then toast them in a frying pan or if we prefer to take them to the oven and Are kept apart.
Fry the chopped tofu in a frying pan, until they are well toasted. Drain the grease with absorbent paper.
In a blender, place the mustard, the two egg yolks, the white wine vinegar, the English sauce, the pepper and the salt, add the oil, little by little, to thicken.
When serving, mix the lettuce with the dressing, Parmesan cheese, toasted rolls and token tokens.

Notes: Once seasoned the salad should be consumed immediately to avoid letting the lettuce sleep. White wine vinegar can be substituted for lemon juice (about 3 lemons).
